We were delighted that Garry Hollihead (3 Michelin star chef) was able to join us for the official opening of the Ursuline’s new canteen. He did a demonstration for a group of year 11 Food Preparation and Nutrition students. Making Roasted cod, served with a fricassee of Cornish mussels, fresh borlotti beans, girolles, served with a sea to earth volute. Garry spoke about the importance of buying fresh British ingredients, he showed the students how to fillet the fish, and brought in whole cod for us to see. He kindly took part in a question and answer session too. We got to taste the dish, it was amazing!
